On Friday night, I realized it was Purim this weekend–and one of my favorite things about Purim is the cookies. I’ve had a hard time over the years finding an eggless recipe that holds its shape. When I substituted the egg with a flax egg–and “I can’t believe it’s not butter” for butter so that a vegan friend could eat them too, the flavor was great!
