Today I’m going to try to make the sourdough sandwich bread again. To start, I needed to activate the starter and ended up with about 200g of discard. I also wanted to make some biscuits. I found this recipe: https://heartbeetkitchen.com/sourdough-discard-biscuits/. I replaced the egg with 4 Tbsp of applesauce and everything turned out wonderful!

They were perfectly flaky and had a great texture. I hate cleaning the food grater, so I used my dough blender on a right out of the fridge cubed stick of butter. I also baked them on a greased cast iron skillet. The next time I do this, I will try to add some buttermilk and some more flour. My only issue with this recipe was that it only made enough dough for 7 biscuits.
