Sourdough Experiment

I followed the sourdough starter process outlined by the Clever Carrot in (https://www.theclevercarrot.com/2019/03/beginner-sourdough-starter-recipe/), and have a nice little starter going.

The first few days of a from-scratch sourdough starter

The starter took longer than I thought it would–since I kept forgetting to feed it. After about two weeks, it was behaving the way I am led to expect. Today, I started my first sourdough recipes. The first one, from this morning, is using Clever Carrot’s Irish soda bread recipe using sourdough discard (https://www.theclevercarrot.com/2021/03/sourdough-irish-soda-bread-ina-garten/). Since I can’t eat eggs, I replaced the egg with a flax egg (1 Tbs ground flax seed and 2.5 Tbs water and let it sit for five minutes). I think this may be why it didn’t completely bake in 45 minutes. I ended up baking it for about an hour to an hour and 15 minutes. After 45 minutes, I put some aluminum foil on the bread to keep it from burning. It still ended up super dense, but it tasted great!

Sourdough discard Irish soda bread

It turned out super tasty! I think next time I will try some different egg substitutes. Bigger Bolder Baking has some different alternatives I will try (https://www.biggerbolderbaking.com/egg-substitutes-for-baking/).
