This week we watched a baking competition show and the family wanted something yummy. I found this recipe (https://www.indianhealthyrecipes.com/eggless-chocolate-cake-moist-and-soft/), which the author says is the base for the cupcakes I made for my son’s birthday.

I made only one modification for this recipe: grape seed oil rather than butter, coconut, canola, or olive oil. We had some on-hand and it doesn’t alter the flavor as much as coconut or olive oil. I was running low on butter… We had a significant amount of buttercream frosting left afterwards, so next time I will cut the cake in half and put a layer of frosting. This turned out to be a great success!
